I spent Thanksgiving day at “the gathering” with my family…Terri (Mom) cooked her traditional turkey day feast…and all of my family members attended…my brother Brad sported a new Holiday look…that I am sure will be a tradition from now on…Addie (my niece) is getting cuter and bigger…much more fun to tease…Friday was spent decorating the outside of the house and re-arranging our sunroom to allow for the tree…first time the tree has made it’s appearance in the sunroom…I will let it settle for a few days before decorating it…Presley and Jeter have been a big help in all of this…so far the tree is still standing..
On Friday I cooked Nick favorite casserole…
Tatertot Casserole–somewhat of a recipe…
Spray large casserole dish with non-stick spray…
Couple lbs of ground beef…cooked with onion and salt and pepper.. dump in casserole dish- 1st layer- spread evenly in dish as with all remaining layers.
2 lg cans of mushrooms….heated with a little butter in the same pan I used to fry the beef after wiping it out with paper towel-2nd layer
bag of frozen petite sweet corn-again heated in the same pan…with a little more butter, salt & pepper…-3rd layer
large can of cream of mushrooms soup—heated again in the same pan…thin it down with a little milk..about a cup or so…I do not measure….wisk it to combined and thin it…-4th layer
Place a layer of tatertots on the top of all the layers.
Bake in oven at 400 degrees until tatertots are done…
I eat mine with Ketchup…Nick does not…Enjoy!!!
